Red Fife is a heritage or heirloom wheat, considered to be Canada's oldest wheat variety. It has not undergone the hybridization of modern wheats. It is a favourite of artisan bakers due to its exceptional flavour and baking properties. It is excellent for making artisan bread, bagels, pizza dough, crackers, pancakes, waffles and a variety of sourdough and soaked baked goods.
All of our flours contain the entire seed or berry. Nothing added, nothing taken away- no industrial processing and no strange ingredients.
To slow down the oxidization of important vitamins and minerals, store your flour in the fridge for up to two weeks or in the freezer for up to one year.
