All The Ways We Eat Liver

Liver is a powerhouse of nutrition and is one of the most nutritionally dense foods on the planet, with significant amounts of iron, riboflavin, vitamin B12, vitamin A, and copper. Today I'm going to share all the details of how my family takes liver.

Beef Liver

Beef liver has a strong flavour so if you don't have a taste for liver (like myself), it can be difficult to get down, especially for kids. This is how I get our family to take it:

I take a 1 lb package of beef liver and thaw it in the refrigerator until it's most of the way thawed but not all the way. That way I can still easily cut it with my knife but not completely thawed and slippery. 

I then cut the liver into the size I want to be taking each time. I put the cut pieces of liver on parchment paper on a tray and freeze.

Then every day I will take a piece out and either give it to baby Dahlia still frozen (watch video below) or I will cut it up into pill size pieces and swallow them whole followed by a sip of water.

To make it fun for the kids, we have "liver parties" where I let them stay up past their bedtime, turn some fun music on and we cheer each other on and see who can swallow the most liver 😂 

Chicken Liver

Chicken liver has a more mild liver flavour that my kids will eat. I use it to make pate' or I put it into the blender and freeze in ice cube trays which I add to ground beef dishes. My most pickiest eater won't eat the pate' but doesn't notice it in the ground beef dishes ☺️

It's my favourite recipe because you can't taste any organ meat or liver taste at all. Just nutrient dense goodness! This makes it the perfect introduction to enjoying liver. We like to spread it on toast with a fried egg on top for breakfast. 
 
When Dr. Weston A. Price studied the healthiest traditional cultures around the world, he discovered that liver was one of the most important foods these people ate on a regular basis. Because of that, I try to serve and enjoy it often.
