Protein Power Cookies
If your child needs to be grain-free or has food allergies– here is a filling (has lots of protein) and delicious snack. They really are packed to the brim with healthy goodness and have amazing flavour and texture. *All of our Gluten-Free Baking Mix recipes use 1-1/2 cups of dry mix, giving you two batches in each bag. This recipe is the exception as it calls for only 1/2 cup of dry mix, giving you six batches per bag. Another option- three batches of these cookies plus your choice of one other gluten-free recipe.

Directions

INGREDIENTS

1/2 cup Jubilee Gluten-Free Baking Mix
1/2 cup of nut or seed butter of choice (our fav is almond butter)
1/3 cup honey
1/2 cup shredded unsweetened coconut
1/4 cup mini chocolate chips
1 Tbsp chia seeds
1 Tbsp hemp seeds
1 Tbsp pumpkin seeds
1 tsp vanilla extract
dash of salt

Preheat oven to 350 F. Grease a large baking sheet. Combine all ingredients in a mixing bowl. I make balls (about 1 Tbsp) with the dough and place evenly spaced on a cookie sheet. I flatten each cookie with a fork as these cookies will only spread slightly. Bake for about 11-12 minutes, until the edges are firm. Allow the cookies to cool on a tray for about 5 minutes then transfer to a cooling rack. Let cool completely before eating.
