Very Berry Muffins
These muffins are bursting with flavour...and fresh fruit! These muffins make a great side for breakfast or a quick snack. Nothing beats a warm blueberry muffin. Except a warm blueberry muffin loaded with strawberries! Add up to 1-1/2 cup of your favourite berry combination. Enjoy!

Directions

INGREDIENTS

2-1/4 cups Red Fife Flour
1-1/4 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1-1/2 cup berries of choice (fresh or frozen)
3/4 cup chopped nuts (optional)

1/3 cup of melted and cooled butter or oil
1/2 cup maple syrup
2 eggs
1 tsp vanilla
1 cup plain yogurt (you can use flavoured yogurt as well if that's all you have) *you can use milk or water if you don't have yogurt
2 tsp of fruit zest (optional)

Preheat oven to 350 F. Grease muffin pan. In a large bowl combine the flour, baking powder, salt, and baking soda. Stir in berries of choice and nuts if using.

In a medium bowl combine the wet ingredients and beat together with a whisk. Pour the wet ingredients into the dry mix. Fold together gently until just combined. Do not over mix. Fill muffin cups close to the top. Immediately put the muffin tray into the oven and bake for about 18-20 minutes or until an inserted toothpick comes out clean.

Remove from the oven. Allow the muffins to cool in the tray for about 5 minutes then remove to a cooling rack.
