This is a great way to add flavor and tenderize larger traditionally tougher cuts of meat.

Ingredients

1 Jubilee Farm eye of round roast
1 tbsp oregano
2 lemons, juice and zest
2 tsp cider vinegar
Salt and pepper to taste
1 tbsp fresh rosemary
2 tbsp sage
3 tbsp olive oil
4 garlic cloves

Instructions

Combine all ingredients except for roast into food processor and blend until well mixed. Season your roast well with the marinade. For best results, allow roast to marinate for 2-3days. When you are ready to cook, pre-heat your oven to 450F. Cook roast at 450F on a wire rack on a pan with a little water in the roasting pan for 25 minutes. After 25 minutes reduce the oven temp to 300F and finish cooking until an internal temperature of 150F is reached (approximately one to two hours).

All About Homeschooling

This past summer we've noticed an uptick in the number of people asking about homeschooling. The most common question we are asked is "What curriculum do you use?". We also hear from people who have a desire to homeschool but feel like they can't for whatever reason. Today I thought I would share a little about our homeschool and some resources we've found helpful.

Maple Pork Tenderloin

Maple and mustard make a sweet-and-savory mahogany-colored sauce. A delicate note of sage gives it a wintery touch. Fresh thyme or rosemary also work if you prefer.

Jubilee Roasted Whole Chicken

This is amazingly simple! Just coat the chicken and throw it in the pot. If you really want to complicate this recipe then you can try throwing it in the pot from a distance, maybe 3-point range. For me, I just plop it in there and get delicious results every time :)
