Ooey Gooey Buckwheat Brownies

These brownies are insanely sinful and delicious! On occasion we take a break from the healthy lifestyle - this is my go to when it's time for something chocolatey, fudgy and oh so good. It does that thing where the batter rises, and then the center part settles down slightly, leaving a thicker, higher crust around the outside. This would be my favourite part of the brownie-crusty, chewy edge pieces Yum!

Directions

INGREDIENTS

1 cup butter
3/4 cup cocoa

1 egg
1-1/4 cup Maple Syrup
1 tsp vanilla
1-1/2 cups Jubilee Gluten-Free Baking Mix
1 cup chocolate chips

Preheat oven to 350 F. Grease brownie pan. Melt butter and cocoa together on stove top and let cool slightly. In a bowl mix together eggs, maple syrup & vanilla. Add the cocoa & butter mixture and stir the chocolate chips and Gluten-Free Baking Mix. Fold together gently until just combined. Do not over mix. Fill the brownie pan and bake for about 30 minutes.

Optional: Top with our chocolate frosting recipe once cupcakes have cooled
