Banana Chia Seed Loaf
For grains to be efficiently digested, we need to either soak, sprout or sour leaven them. This is a delicious "soaked" banana loaf loaded with nutrition.

Directions

INGREDIENTS

2 cups of Jubilee Red Fife
1/2 cup of melted butter or oil of choice
2 Tbsp apple cider vinegar or freshly squeezed lemon

2 eggs
1-1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 cup Jubilee Maple Syrup
2-3 Tbsp chia seeds

Mix flour, melted butter and apple cider vinegar in a bowl. Cover and let rest for 12-24 hours.
After the flour has rested, in a separate bowl mix remaining ingredients. Add to the flour mixture and combine. Do not over mix. Bake for 35-45 minutes in a well greased pan at 350 degrees F. You could also divide the batter between 2 smaller loaf pans and bake for 20-30 minutes.
